Crab

Crabmeat is problematic. From fresh to pasteurized the supply chain has been disrupted. We are not being dramatic about this. One of our team members was in Baltimore last week and could not find a crab cake anywhere. No crab cakes on the Chesapeake Bay, the literal home of the blue crab?

Cod and Ground Fish

  • Jumbo Fluke is limited and expensive, though landings have improved slightly.
  • We are seeing lots of East Coast Halibut this week as well as Wild Striped Bass.

Wild and Farmed Salmon

  • Prices on Canadian Salmon continue to rise and prices on European salmon remains high.
  • Kravoy Salmon is arriving to us every Monday and Thursday. The farm is currently having low on larger sizes but they are confident that they will have them back in the next two weeks.
  • Wild Kings and Sockeyes are starting to become available. Pre-orders are preferred.

Tuna

  • Supplies of fresh tuna remain scarce this week. Global catch has been low for months and there are no indicators when we might see improvements.

Live Lobster

  • Live Lobster prices have jumped this week. It appears that processors are buying large quantities in order to meet the demand on meat and tails. There has also been a spike in demand overseas as more countries begin to re-open.
